I am going skiing on Saturday (wooooo). I am so excited to breathe in that mountain air and gobble up all the mountain food. However, it’s meant that this week has been a bit hectic because I’ve been trying to finish off any last bits and bobs so I can take the week off. But it’s SO worth it and I am SO excited.
I’ve got a handful of super speedy recipes for you this week, perfect for when you’re short on time or just want something easy and delicious to rustle up.

WEEKLY ROUND UP
20 MINUTE SCALLION CHICKEN - The chicken is juicy and tender, and cooked in a soy sauce, garlic, ginger, and scallion (spring onion) sauce. It takes less than 20 minutes to make and is one of my go-to easy chicken recipes during the week.
PEA AND ASPARAGUS ORZO - This pasta dish is full of greens and so great when you fancy something fresh yet comforting. It comes together in less than 20 minutes, so it's perfect for a weeknight dinner.
HONEY GINGER CHICKEN - I’ve made this recipe twice this week haha and it’s SO good. It’s sweet, tangy, salty, all things delicious. Comes together in 20 minutes, so don’t hang about, go and make it !!
TOFU MEAL PREP - Optionally, you can make the tofu and just meal prep that on its own, and then serve with rice, noodles, or whatever you fancy. Or, you can make it with the rice noodles and extra veggies I suggest in this recipe. This meal prep tofu only takes 20 minutes to make, is totally vegan, and such a crowd-pleaser.
CILANTRO / CORIANDER PASTA - Using cilantro (coriander), lemon, garlic, parmesan, chilli, and olive oil, the green sauce is combined with your pasta of choice, and then topped with a tomato paprika dressing for sweetness and colour.
