A Little Catch Up
Hello hello, I hope you’ve had a lovely week. It’s now the weekend (wahoooo).
I’m currently on the train traveling down to the seaside from London to visit some friends. The weather forecast is saying blue sunny skies for the next week and I can’t explain how happy this makes me feel!
Putting the weather aside, I’ve got some really simple and comforting recipes with bags of flavour for you this week. I really hope you enjoy them…regardless of whether it’s cloudy, rainy, or sunny with you!
These One-Pan Meals Will Make Your Life Easier
I adore a one-pan dish for several reasons; 1. less washing up, 2. less effort, and 3. they’re always delicious.

Creamy Bruschetta Chicken Bake - this is best served with a carb in my personal opinion. Pasta, potatoes, rice, or bread…all of them work! I really really love this dish and I hope you do too!
Pistachio Pesto - Traditional pesto uses pine nuts, but in this rich pesto recipe, we’re using pistachios. The nutty flavour with its subtle sweetness is balanced by the brightness of fresh herbs and a hint of garlic, creating a creamy yet earthy taste profile.
Chicken Pot Pie with Filo Pastry - also known as my chimi-chicken pie. It’s inspired by chimichurri, the slightly addictive green herbaceous sauce from Argentina and Uruguay, and the classic American chicken pot pie. The result is a recipe that is comforting with hints of summer!
