Hey, hi, hello! Happy Friday gorgeous butter beans! I hope you’ve all had a joyful week and have a relaxing (or busy) weekend ahead of you.
I’m writing to you from rainy Somerset (where my family are based), as I’m visiting for the weekend. It’s so lovely to escape from the big smoke from time to time, to give my lungs a bit of a break. I’m looking forward to going on a couple of long, refreshing walks…if the weather permits! And alongside that, I plan on cooking up some simple recipes for the fam. I’m sharing a couple of easy ones with you today actually, they’re some of my favourite! So, let’s get on to this week’s round up! :)
Oooo quickly before we get onto the recipes, you guys are LOVING my Marry Me Chicken Ramen! So many of you have made it and given it raving reviews…so thank you! Okay…now onto this week’s recipes.
RECIPES
MAPLE TAHINI AUBERGINES. You guys absolutely love my aubergine/eggplant recipes. My most popular is my Sticky Ginger Aubergine, closely followed by my Sticky Miso Aubergine. They’re both really simple to make and are such flavour bombs.
ROASTED TOMATO FETA BUCATINI - Taking inspiration from the viral baked feta pasta trend, this focuses on just the sauce, which is a one-tray bake, blended up and then added to your pasta of choice. It’s a great dish to make when you’re looking for something comforting, delicious, yet unbelievably straightforward.
