It’s finally time to don the fluffy socks and shuffle around the kitchen while making a comforting bowl of warm goodness.
I’m not going to lie, it’s quite strange returning from hot, sweaty, and sticky India (Henry and I went to India for a friends wedding for two weeks!!), to a rather chilly, damp London. At first, I wasn’t sure if I was ready for the colder weather…but today, the sun is shining, and it’s reminded me of those crisp sunny mornings that I have missed dearly over the summer months.
So, the cosy dishes and hygge vibes shall commence. And to kick it all off, I made a beeeeautiful claypot tofu stew, inspired by Chinese methods. It’s full of flavour, it’s plant-based, and has a tiny spicy kick to it. So, without further ado, let’s get into the recipe roundup!
RECIPE ROUND UP
CLAYPOT TOFU - I can’t even put into words how delicious and comforting a bowl of this claypot tofu is. It’s SO good, full of goodness, and a total crowd-pleaser! Give it a go and let me know what you think! You can always add in various types of protein if you like. Chicken would go well with it, or beef! Trial things out, I'm sure it would all be delish!
SCISSOR CUT TOFU PASTA - This easy Tofu Pasta is phenomenal. It's like normal handmade pasta, but much faster because of the scissor cut method, vegan, and contains extra protein. Ready in just 15 minutes, this Tofu Pasta with a Pesto sauce and a dollop of cottage cheese is an absolute game changer!
KIMCHI MISO FRIES - A collaboration with the wonderful Calum Harris, a fabulous vegan cook and author of “The 20 Minute Vegan” !! Well…part one. We haven’t uploaded part two yet, as we are waiting for the kimchi miso fries to ferment. Essentially, we’ve added potato wedges into a jar with kimchi and a salt brine. Totally inspired by Val Moore, also known as Appetite.Life. We are intrigued to see how they turn out, so stay tuned!!
