This week has been filled with vibrant and fresh foods, which I love. From Cypriot-inspired halloumi sandwiches to Korean Kimbap (that is totally vegan), it’s been a colourful week. Check out all my recipes here, or see them below.
I also made cookies (not so vibrant and fresh hehe).
Those of you who have followed me for a while will know that I don’t have the biggest sweet tooth, and I’m not exaggerating when I say that I haven’t made cookies in years. I’m not a baker, and whenever I venture into the land of baking…things go wrong. Cakes sink, bread fails, and tarts don’t set. BUT, it’s an area of cooking that I want to improve in, and so I took a baby step and made cookies. Chocolate chip cookies. I based the recipe off several cookie recipes and then free-styled it (literally an accident waiting to happen). However, despite the spontaneity, it was a SUCCESS. The cookies were gooey, chocolatey, and dangerously addictive. So, here’s how I made 4 lovely cookies:
80g unsalted butter, melted
80g light brown sugar
20g caster sugar
140g plain flour
1/4 tsp bicarb soda (baking soda)
Pinch of sea salt
1 egg
1/2 tsp vanilla paste
100g chocolate chips
Preheat your oven to 190C or 170C fan. Get a mixing bowl and add in all of your dry ingredients. Give everything a mix and then add in your wet ingredients. Combine until all the flour is incorporated into the dough, and then add in your choccie chips. Mix mix mix, and then scoop into 4 equal-sized balls. Get a baking tray, line with baking paper and then place your cookie balls onto the tray. Bake for 10-13 minutes and then remove and eat.

FRIED HALLOUMI SANDO - One of my friend’s always goes on about how she doesn’t have any inspiration when making vegetarian sandwiches. Well, this one is SO good and easy to make. It’s inspired by Cypriot flavours and absolutely hits the spot. Find the recipe here!

GYROS-INSPIRED DUMPLINGS - also known as my Greek Summer’s Night Dumplings. I adore Gyros (a Greek dish of meat wrapped in pita with tomato, onion, fries, tzatziki), and when the sun FINALLY decided to reappear in the UK (thank you), I really fancied dumplings and gyros…so I combined them to make these babies.
