Well hello there friendo (reference from The Tourist…if anyone has been watching that). The temperature has dramatically dropped here in London, which calls for a week of warm comfort food (my favourite).
Today on the menu, I’ll be sharing my gochujang gnocchi lasagne, salmon and mushroom risotto, and pan-fried beef & spinach dumplings.
But before I go onto the recipe, this week I had the pleasure of attending Madeleine Olivia’s book launch for “Make It Vegan”. I adore cookbooks. The photography, recipe creation, graphics, everything about a cookbook is so “hygge” and wholesome, especially Make It Vegan. Maddie has done a beautiful job of filling it with simple, tasty, plant-based recipes for everyone to try. So, if you’re looking to experiment with more veggies or even a vegan diet this year, go and check it out!!

Gochujang Gnocchi Lasagne - This Spicy Gnocchi Lasagne with Gochujang is one of my new favourite comfort foods. I love gochujang recipes and trust me when I say that gochujang goes so well in a ragu.
Salmon & Mushroom Risotto - This Salmon and Mushroom Risotto is bursting with flavour, simple to make, and only requires a handful of ingredients. Seasoned with paprika, herbs, and parmesan cheese, it's a great one for a weeknight meal or for meal prep!
Pan-Fried Beef & Spinach Dumplings - These Pan-Fried Beef Spinach Dumplings with a whipped ricotta dip, harissa chilli oil drizzle, and chives are some of my favourite easy dumplings to make. They're bursting with flavour and have a lovely crispy top that adds an addictive crunch.
