A Little Catch Up
Oh boy, have you been sick? Cause this January has hit me hard with the flu.
If you’ve also been under the weather, I hope you’re feeling considerably better. However, if you’re still feeling rough, you should definitely make some of my carrot and ginger soup …it’s packed full of goodness and will hopefully make you feel right as rain in no time!
January is a month to refresh, relax, and unwind from the chaos of the previous year. And I love it (despite being ill). The run up to Christmas is always WILD, so having a whole month with practically no plans…is bliss.
One thing I do love to put in my diary though, are supper clubs. For those of you who haven’t stumbled across them before, a supper club tends to be an intimate dining experience where a multi-course set meal is prepared for number of guests (can range from 6 to 40 or beyond!). It’s a very fun way to spend a cold winter’s evening and a great way to support various chefs and restaurants. I’m going to one at the end of the month called January Blues by Sophie aka sophiesmunch. If you’ve also got a ticket, then I’ll see you there! This Week’s Recipes!
Loco Moco - a Hawaiian dish consisting of rice, homemade burger patty, mushroom and onion beef gravy, and a fried egg topped with chives. It's the ultimate comfort food and takes less than 30 minutes to make.
Pistachio Pesto - This Easy Pistachio Pesto recipe only requires 6 ingredients and takes less than 5 minutes to make. All you need are pistachios, fresh basil, garlic, olive oil, parmesancheese, and lemon juice.
Chicken Pasta Alfredo with Broccoli - requires 3 ingredients for the alfredo sauce along with fried chicken breast and finely chopped fresh broccoli. It's such a simple recipe and a great choice for a quick weeknight dinner.
