G’day my little blueberries! I hope you’re all doing really well and have had the most incredible week (it’s Spring time babyyyy!!). The flowers are blooming, the birds are chirping, and the weather is getting warmer…time for a change in what we eat.
Out with the winter warmers and in with the spring dishes!
Before I bombard you with the recent recipes I’ve made, I have this secret project I’m hiding from you and honestly I am DYING to tell you all about it. A little hint…if you can guess…👩🍳📕!! (I can’t contain my excitement!!!). Anyway, things are underway and everything is coming together nicely. So, stay tuned because the big reveal is coming very soon.
Moving onto your bellies and how I can help feed them…I have a handful of yummy recipes for you to enjoy from my 2023 Viral Feta Spring Flatbreads (hands up if you remember them 🙌) to my Pork Belly Udon Carbonara. I’ve got a recipe for every occasion, so without further ado, let’s jump into the gallery of recipes below:
FETA SPRING FLATBREADS - I am obsessed with my stuffed Feta Spring Flatbreads! They're filled with mint, spinach, feta, and garlic, a perfect side for a spring day feast. The bread only requires two ingredients and is really simple to make! This recipe went viral thanks to you all!
PORK BELLY UDON CARBONARA - This is my Pork Belly Udon Carbonara and it is so incredibly delicious. All you need are egg yolks, parmesan, garlic, pepper, and cream for the sauce. It comes together in less than 20 minutes and is a go-to pasta dish of mine!
EASY EGGPLANT PARMESAN SANDWICH - This is my easy Eggplant Parmesan Sandwich recipe and it's one of my favourite lunches to make. You've got the crunchy outside and juicy inside eggplant discs, the delicious marinara sauce, melted mozzarella with fresh basil, and then airy focacciabread to encase the tasty sandwich.
3-INGREDIENT POPPY SEED BAGELS - My sister loves poppy seed bagels, so I thought I’d attempt to come up with an easy recipe so she can make them from scratch whenever she fancied. They turned out SO good, however, that I decided to share them with you! You only need self-raising flour, Greek yogurt, and poppy seeds for the dough, and a few optional pantry ingredients including baking soda, butter, and eggs. They come together in around 45 minutes and can be batch made so you can have them throughout the week!
AVOCADO PESTO - This Avocado Pesto is one of my favourite green pasta sauces to make. It takes 5 minutes to make and only requires 6 ingredients. It's perfect for when you're looking for a delicious speedy meal and something that’s easily customisable.
CAPRESE FLATBREADS - These are my Caprese Flatbreads and they're the perfect stuffed flatbread recipe to make as a side dish on a summer's day! Stuffed with sun-dried tomatoes, basil, feta, cream cheese, and mozzarella, they're such a treat. You only need 2 ingredients for the bread, which is probably one of the reasons this recipe went totally viral last year! I’m sharing them with you again, because they deserve a seat at your table.
SWEET POTATO PASTA SAUCE - This is the best Sweet Potato Pasta Sauce. You only need 6 ingredients to make it, and it comes together on one sheet pan. Simply combine baked sweet potatoes, tomatoes, garlic, shallots, paprika, and oregano in a blender to make the sauce. Then combine with your favourite pasta shape and you've got yourself an easy, simple, and delicious midweek meal.
