Happy Friday everyone, I hope you had a lovely week!
I woke up this morning, and because our apartment is east facing, I was greeted by the most beautiful sunrise over London. Sadly, my phone was out of battery so I didn’t take a picture, but it was so glowing and provided me with the most wonderful start to the day…so hopefully that vision brightens up your day too!
This week has been packed full of events, recipe development, and cooking. My wonderfully talented friend Natalia Rudin (@natsnourishments) and I went out for dinner to Jikoni, a lovely fusion restaurant serving an array of dishes inspired by countries from around the world. The food was yummy and would definitely recommend! I also had the pleasure of being invited to an event hosted by Just Spices. We cooked and ate a wonderful 3 course meal, while learning all about their unique and flavourful spice blends!
Now, on the subject of cooking, one thing I love about the colder months is snuggling up and having a warm bowl of homemade curry. So, below are 7 of my favourite comforting curries that range from being really simple to make, to requiring a little bit more time and effort, but they’re all so worth it and absolutely delicious!
Aubergine Tikka Masala - a personal fave.
Mango Curry - One of my fave dishes to make and serve when I worked as a chef.
Black Pork Curry - Inspired by a dish I had at a Sri Lankan restaurant. So yummy.
Baked Bean Curry - Inspired by South African Chakalaka, a flavourful bean relish.
Squash Katsu Curry - A take on the classic Japanese Katsu Curry.
Tofu Coconut Noodle Curry - You can’t go wrong with a warming bowl of curry noodle soup.
Butter Salmon Curry - Butter chicken but make it salmon.

EASY CHIVE POCKETS - These easy Chinese-inspired chive pockets (also known as chive pies or Chinese chive dumplings) are really simple to make. They only require three ingredients for the filling and have an easy dough recipe that is straight forward to follow. They're absolutely delicious and perfect for when you need a tasty snack!
AIR FRYER GREEK YOGURT CHICKEN - This chicken dish is so juicy and simple to make. All you have to do is marinate your chicken in a 6 ingredient sauce and then air fry your greek chicken for 30 minutes. It comes together so quickly and is perfect for a weeknight dinner or meal prep.
SHAKSHOUKA-INSPIRED SARDINES & EGGS - This has to be one of the best Sardines & Eggs recipes I’ve ever made. You need less than 10 ingredients and it’s all made in one pan. It’s full of flavour and perfect for breakfast, lunch or dinner!
