A Little Catch Up
Happy Friday my loves!! We’ve had snow, we’ve had rain, we’ve had frost, we’ve had sunshine…what a week! I hope you’ve kept yourselves warm and cosy.

^ this is why eggplants are called “eggplants”!! Although in the modern day, we are used to seeing large purple things, which we call eggplants, or aubergines, where does the name eggplant come from?
The name "eggplant" comes from the plant's early varieties, which were small, white, and oval—resembling eggs. This image was taken when I went to Brixton market over the weekend. I’ve never seen an OG eggplant before so this got me very excited.
^ one of the many things I love about winter is the sunrise. This was taken at 7:30am, when I was out for a run. How stunning?! Such a beautiful way to wake up and start the day.

This Week’s Recipes!
Stuffed Chicken Breast with Stuffing - This is my Stuffed Chicken Breast with Stuffing Recipe, made on the stove top with a really simple homemade stuffing. It's inspired by my Mother's stuffing recipe combining sausages, almonds, apricots, a few herbs, garlic, and shallots. It's unbelievably delicious and way better than store-bought stuffing.
Lazy Hot Honey Chicken Sandwich - This is my Hot Honey Chicken Sandwich for when you can't be bothered to cook. It's simple to make and unbelievably satisfying. We've got focaccia slices spread with a buffalo, chive, mayo, and garlic butter, topped with fried chicken, dill, lemon, and yoghurt salad, and pickles. The fried chicken is also coated with a hot honey oil to make it extra juicy! I really hope you enjoy it!
Garlic & Prawn Ricotta Puffs, aka Gnudi. Gnudi are considered to be gnocchi’s cousin, and I would argue a far simpler, lower maintenance cousin. You can find the recipe on page 46 of my cookbook, which is currently 40% off on the HarperCollins website!
