I also feel like I HAVE to talk about the Olympics!
One of the things I love most about the Olympics is how invested I get in a sport that I’ve literally never given a donkey’s ear about before. Last night, Henry and I turned on the TV and the BMX racing was one. WHO KNEW that it could be so intense. The skill and the speed at which their legs went round and round is wild to me. A few of you have also messaged me with the random sports you’ve suddenly become invested in and they range from shooting, 3x3 basketball, BMX, badminton, gymnastic, to judo. Hahah. Love it.
As someone who used to sprint, I am VERY excited for the track races. I’ve also watched Netflix “Sprint” series so I am up to date on all the fastest people in the world. It’s going to be a very fun few weeks my friend.
You: “Em, can you stop talking about sport and give us the recipes of the week now?”
Me: “Yes, yes, sorry, here they are my love”.
Tofu Meal Prep
This is the best Tofu Meal Prep that is so quick and delicious. Optionally, you can make the tofu and just meal prep that on its own, and then serve with rice, noodles, or whatever you fancy. Or, you can make it with the rice noodles and extra veggies I suggest in this recipe. This meal prep tofu only takes 20 minutes to make, is totally vegan, and such a crowd-pleaser.

Easy One Pan Vermicelli Noodles
This easy Vermicelli Noodles recipe is made in one pan, so it's a fuss-free dish that takes less than 20 minutes to make. All you need is a handful of nutritious ingredients including tofu, edamame beans, shiitake mushrooms, carrot, coriander, your vermicelli noodles, and a homemade 7-ingredient stir-fry sauce to make this simple, delicious meal.
