Soup season reminds me of my childhood. And although my style of soup has changed quite a bit compared to what my parents would make me - I mean I don’t tend to make the classic potato soup anymore, it’s more experimental, shall we say - it’s still super comforting and one of my favourite things to slurp on, on a cold day.
One of the highlights of eating soup (in my opinion) is what it’s served with. Croutons, focaccia, sourdough, or, the best of the best, a cheese toastie. Lightly crunchy on the outside and gooey on the inside. My FAVE. So, if you’ve never tried dipping a toastie into your soup before, then get ready because one of my recipes this week will blow your mind (and tastebuds).

TERIYAKI CHICKEN UDON SOUP - This is my Teriyaki Chicken Udon and it’s about to become your new favourite noodle soup recipe. It’s super comforting and perfect for those colder days. My mum used to make us a similar dish when we were younger, so I’ve jazzed it up a bit and omg it’s so so good.Â
TOFU TOMATO SOUP with spring onion cheese toastie - If you've never dipped a spring onion cheese toastie into a tofu tomato soup before, then this is your sign to try it. It's absolutely delicious and really simple to make. The homemade tomato soup is topped with air fryer tofu bites that are crispy and delicious. Using soy sauce and sesame oil to flavour the soup, it's so tasty and perfect for a weeknight dinner on a cold day.
VEGAN STEAMED BUN - These are some of the best fluffy buns I’ve ever made. They’re plant-based and stuffed with a gorgeous aubergine filling. It’s a really simple recipe to follow and I’d highly recommend giving them a go!
