Homemade Kimchi with the King of Fermented Goods aka KenjiCooks
Kenji is an absolute legend, especially in the fermenting sphere. The other day, he popped round to show me a thing or two about the fermenting process. We made a really simple kimchi and I think it’ll surprise you how easy it is to make. Find the full recipe in the video description here.
Roasted Red Pepper and Gouda Soup
I know we are at the peak of summer right now (a whopping 26 degrees in London haha if we’re lucky), but I never stop fancying soup. And this roasted red pepper and gouda soup is such a delight, no matter the weather.
Sausage Gochujang Dumplings topped with Kimchi
These are inspired by mandu, one of Korea’s national dumplings. Now,
I love gochujang – a slightly addictive Korean fermented red pepper paste – as much as the next person, but these sausage gochujang dumplings occupy a serious place in my go-to favourite recipes list. They’re sweet and spicy, with joyous bites of kimchi dotted on top for that extra tang. Serve these to anyone and I guarantee you’ll see a smile. You can find the recipe in my cookbook, so make sure to pre-order so you can make them asap!
