Potato & Ricotta Pockets with Chorizo, Crème Fraîche & Dill on p111
I spent the first four years of my life in Poland and although I was too young to recall eating pierogi, my parents joyfully recount stories of us trotting down to the local corner restaurant and devouring these cheese and potato-filled dumplings. This recipe is a bit of a twist on the traditional – instead of topping the dumplings with bacon, we’re using its spicier cousin, chorizo, to give it a bit of a kick. Teenie Tiny Parcels with Whipped Feta Yoghurt & Paprika Butter on p61
Variations of manti can be found all over Turkey and in Central and Western Asian cuisines. My take on it is simple: full of complementary flavours and adorned with paprika butter and mint. The fiddly bit of this recipe comes in when you mention the size of the dumpling. There’s a well-known saying in Turkey that the chef has done a good job if you can fit 40 manti dumplings on one spoon ... basically, the smaller, the better ... but also the more time-consuming. It’s up to you to decide whether to keep the dumpling wrappers whole or to cut them into quarters for a more traditional dumpling. Both will be delicious. Hoisin Chicken & Chive Crispy Skirt Dumplings on p58
When travelling across China, I ate my body weight in jiaozi – arguably one of the best-known Chinese dumplings. I remember visiting the Great Wall in Gubeikou and watching our host rapidly assemble dozens of these dumplings. This version takes a more restaurant-style, modern approach, with a cornflour slurry forming that delightfully crispy bottom. They’re bold in flavour, varied in texture and super juicy.
